Damascus Gyuto – Burl Timber & Turquoise Resin Handle
A handcrafted Damascus Gyuto combining one of Japan’s most versatile chef’s knife profiles with an exceptional burl timber and resin handle.
Meaning literally “beef sword”, the Gyuto evolved as the Japanese interpretation of the Western chef’s knife and has become a favourite all-purpose blade for professional and home kitchens alike.
Its gently curved cutting edge and fine pointed tip make it equally at home slicing meat, preparing vegetables, chopping herbs and performing detailed knife work.
This knife features an intricately patterned Damascus steel blade, with flowing layers extending across the face of the steel and creating a unique visual character.
The handle is the centrepiece of the design. Highly figured golden burl timber is combined with a rich turquoise resin inlay, preserving the irregular natural edges of the timber within the resin. The result is a handle in which the organic grain and contemporary material become part of a single composition.
